Radicchio, Fennel, Pear & Blue Cheese Salad
Ingredients
- 1 medium fennel bulb, trimmed
- 1 medium firm Beurre Bosc pear, halved and cored
- 1 head radicchio, trimmed and roughly shredded
- 125g blue cheese (your choice), crumbled
- 1/3 cup toasted walnuts
Red Wine & Honey Dressing
- 2 tbs red wine vinegar
- ¼ cup extra virgin olive oil
- 1 tsp Dijon mustard
- 1 tbs honey
Method
- Using a sharp knife, slice fennel and pear very thinly. Arrange radicchio, fennel and pear on a large serving platter. Scatter with blue cheese and walnuts.
- Combine all ingredients in a screw top jar to make red wine dressing. Season with salt and pepper. Shale until well combined. Drizzle dressing over salad.
