Fig, Almond & Apricot Balls

Ingredients

  • 1/3 cup pitted prunes, chopped
  • 1/2 cup dates, chopped
  • 1/3 cup dried figs, chopped
  • 1/3 cup almond meal
  • 1/3 cup dried apricots, chopped

Method

  1. Combine all ingredients in a food processor and blend until peanuts are crushed
  2. Use gloves and form mixture into 10 balls, squeezing tightly so each ball holds its shape
  3. Place balls in fridge to chill for 2 hours or overnight
