Radicchio, Fennel, Pear & Blue Cheese Salad

Ingredients

  • 1 medium fennel bulb, trimmed
  • 1 medium firm Beurre Bosc pear, halved and cored
  • 1 head radicchio, trimmed and roughly shredded
  • 125g blue cheese (your choice), crumbled
  • 1/3 cup toasted walnuts

Red Wine & Honey Dressing

  • 2 tbs red wine vinegar
  • ¼ cup extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 tbs honey

Method

  1. Using a sharp knife, slice fennel and pear very thinly. Arrange radicchio, fennel and pear on a large serving platter. Scatter with blue cheese and walnuts.
  2. Combine all ingredients in a screw top jar to make red wine dressing. Season with salt and pepper. Shale until well combined. Drizzle dressing over salad.
